Aloo Tikki Chole or Aloo Tikki Chana Chaat is a popular North Indian street food dish where crispy & golden spiced potato patties are generously loaded with a velvety thick spicy chickpea curry, drizzled with a sweet chutney & tangy green cilantro-mint chutney, and topped with crunchy red onions and crispy chickpea flour noodles called sev. Every bite is a mélange of textures and sweet, spicy, savory & tangy flavors. Finger-licking good and highly addictive! The masala chai rounds off the meal nicely and leaves you blissfully satiated.

We will be making the potato patties, chickpea curry, sweet chutney & green chutney from scratch. The meal is naturally gluten free and vegan. Add bread/ pita/ naan to get your carb fix. Most ingredients are included.

Singapore Noodles or Singapore Mei Fun is one of the most popular dishes on any Chinese & Indo-Chinese take-out menu. A diner's delight, Singapore noodles are lightly curried thin rice vermicelli tossed with a plethora of crunchy colorful vegetables, fluffy eggs, and meat such as chicken/pork & shrimp, or a vegetarian protein such as tofu. Quick, easy, filling, fusion fast-food. The result is perfect - this dish is a hearty one-plate meal in itself and the star ingredient that gives it its distinct flavor is curry powder. Eat it for breakfast, lunch or dinner!

We will be making a vegetarian version with eggs and tofu. Leave the eggs out to make it vegan.

Bánh Xèo

Sunshine yellow sizzling rice crepes, called bánh xèo are a southern Vietnam favorite. Made from rice batter tinted by turmeric, this warm crisp-tender crepe is a spectacular jumble of flavors, colors, textures, fragrances and temperatures. The crepes can range in size from as small as a taco to as wide as a dosa, depending on the size of the pan and the part of the country you are in.

Bánh Xèo are usually served with an entire garden on the side! To enjoy it, you tuck pieces of the sunny-yellow pancake inside a cool lettuce leaf along with lots of fresh, aromatic herbs and then dip the bundle into nước chấm, the traditional Vietnamese dipping sauce that contains sour, salty, sweet, umami, and spicy flavors. Truly one of a kind, crispy and chewy, zippy and savory, and eaten by the handful—you won’t be able to stop at just one.

How many will the meal serve?

Recipes are designed to serve 4.

How long is each class?

Each class is one-hour long. We will aim to complete our meal within that hour. Does not include clean up. You will still have dishes to do afterward.

Can the participants ask questions and show their dish to check if they are doing it right?

Yes, absolutely! Recipes are easy enough to follow along. You can also see my dish as I cook with you, ask questions and show me your dish if needed. 

Can my husband/child also participate?

Yes! Cooking is a great way to bond with your family. It's more enjoyable, work gets done faster and meal times don't feel like a chore. 

Do I have to sign up for all classes?

No. You can choose to sign up for any/ as many classes you like. 

Can you accommodate special dietary needs such as vegan, gluten-free, dairy-free, nut allergies, etc.?

All classes clearly state if the meals are vegan, gluten-free, etc. I will suggest alternatives wherever possible but the diet-specific ingredients will have to be sourced by the participant.

How do I collect the ingredients? Do you deliver?

We don't deliver the ingredients. I will have one or two time slots available for pick up locally a day or two before the scheduled class. Please check the pick-up time and place before you sign up. If for some reason you are not able to make it, please send me an email at hello@nibblengobble.com and we can figure something out. 

Will you provide all the ingredients to make the meal?

Most if not all ingredients are included. Spice mixes, aromatics, cuisine specific and hard to source ingredients will be included. The idea is for the participants to be able to try out a new recipe/cuisine before investing in large quantities of the ingredients that go into making it. Some produce, optional add-ins, oil, salt, etc. may not be included. Recipes will clearly state what is not included. Please check before you sign up.

Do your recipes require any special kitchen tools or gadgets?

Most recipes will work with tools that home kitchens are equipped with. Apart from the basic chopping board, knives, spatulas, plates, spoons etc., recipes list the pots & pans and any special tools that may be required.
